Hot and sour potato shreds

I really like eating spicy and sour potato shreds. The first try was a bit of a failure. It was sour but not spicy enough. There was a bit too much vinegar, but I like to eat it sour~

Prepare ingredients: potatoes, onions, ginger, garlic, Sichuan peppercorns, dried red peppers, salt, and vinegar.

Cut potatoes. . stick. . Hehe, I rarely cook. I’m not very good at holding a knife or cutting vegetables

Soak the cut potato shreds in water to remove the starch (the fried potato shreds will be refreshing and not sticky)

Mince the onion, mince the garlic, shred the red pepper, and mince the ginger.

Add oil to the pot and stir-fry the pepper until fragrant.

Take out the fried peppercorns, add onion, ginger, minced garlic and chili pepper segments into the pot and stir-fry until fragrant.

Add the soaked shredded potatoes, stir-fry for a while, then add an appropriate amount of vinegar and soy sauce and continue to stir-fry the shredded potatoes.

Finally, add chopped green onion and appropriate amount of salt to taste.
