Stir-fried bamboo shoots with bacon
Overview
A friend recommended the Wangjiawu bacon and sausages from Xiangxi Cured Meat. After I tried it, I found that the bacon was smoked and tasted really good. It was also made from three-layered local pork. The meat was firm and delicious. I specially bought fresh bamboo shoots to stir-fry with the bacon. The fresh bamboo shoots can absorb the aroma of the bacon and absorb the oil, making the meat taste fragrant but not greasy.

The bamboo shoots I bought today are very firm and tender. It’s more expensive to buy bamboo shoots now

Peel off the outer layer of the bamboo shoots, slice them lengthwise, and boil them in salted water for about 8 minutes

Pour cold water into the pot and boil for about 5 minutes. This way you can easily clean the surface and make it easier to cut the bacon. It can also remove some of the fat and make it healthier to eat

Cut the cooked bacon into 2 mm slices. You can see from the sliced meat that it has three layers of meat

Because bacon is relatively salty, the cut slices are soaked in boiling water for about half an hour, so that the fried meat will not be very salty

Remove the cooked bamboo shoots and cut the green pepper into irregular slices

Put a little oil in the pot and sauté the minced ginger and garlic until fragrant, then add the bacon slices and stir-fry until it changes color

Pour in the bamboo shoot slices

Stir well, add a little boiling water, and cook over low heat for about 3 minutes
