Wrap the mold with tin foil, place cake slices on it, soak the gelatine slices in ice water in advance, drain the water and set aside

Add the drained gelatine slices, stir until the gelatine slices are melted, and set aside to dry. This is the crème anglaise

Whip 200g light cream until lines appear and are not flowing (do not whip until it is in a decorating state). Mix evenly with English buttercream to form the mousse liquid

To make mirror pectin: add a packet of QQ sugar to an appropriate amount of boiling water, stir and melt. Let it dry, pour it onto the solidified mousse, and refrigerate until the pectin has solidified!
