Cut the eggplant into cubes and soak in salt water.

Clean and chop the pork.

Boil a pot of water, put the noodles in, cook for a while, then take it out and soak it in water.

Squeeze out the water from the diced eggplants and sprinkle with a little flour.

Heat oil in a pan, add diced eggplant and stir-fry.

When the diced eggplant becomes slightly soft, add the chopped meat, shredded ginger and garlic and stir-fry for about five minutes.

Then add half a small bowl of water and simmer for a while.

When the water is almost dry, add tomato paste, soy sauce and other seasonings.
