Ingredients
Steps
-
Weigh all materials
-
Put the fine sugar into the egg mixture and mix well, set aside
-
Take a pot, heat the evenly stirred egg liquid over water to fully dissolve the sugar, stir while heating
-
When the temperature reaches 37 degrees, take the mixing bowl out of the pot
-
Beat the egg liquid quickly to keep the temperature at 37 degrees
-
Use an electric mixer to mix evenly in circular motions. The mixing time is about 4 minutes
-
Continue to beat until the egg liquid begins to turn white. Lift the mixer and the batter will slowly flow down and leave traces, indicating that the mixing is complete
-
Just heat the milk to about 36 degrees
-
Slowly add the milk, and while adding the milk, beat the egg liquid at low speed to make the batter more delicate!
-
Stirring time is about 2 to 3 minutes
-
Use a rubber spatula to flip upwards until the batter becomes smooth and shiny. Stir for about 1 minute
-
Sift in low-gluten flour
-
Sift in the low-gluten flour, insert a rubber spatula into the mixing bowl at the 2 o'clock position, lift it upward toward the 8 o'clock position, and continue to stir the batter, operating as gently as possible
-
Stir until the batter is fluffy, shiny and free of dry powder. Just pick up the stirred batter and it will fall down quickly. It will take about 2 minutes
-
First preheat the oven to 190 degrees and turn the heat up and down! Line a baking sheet with oiled paper and pour in the evenly mixed batter
-
Use a spatula to spread the batter evenly on the baking sheet
-
Drop the baking pan from a high height to the chopping board to crush the large bubbles on the surface of the batter. Place it in the preheated oven and heat it up and down to 190 degrees on the middle rack for 16 to 17 minutes
-
Place the baked cake upside down on a cooling rack. After the cake has cooled slightly, remove the baking sheet and cover it with a clean cloth to prevent it from drying out
-
Tear off the oil paper from the cooled cake and turn the cake over with the paper
-
Cut the fruit to be stuffed into small pieces and set aside
-
Weigh the whipping cream and start whipping the whipping cream. In summer, you usually need to put ice water underneath to whip it
-
Beat at high speed, add fine sugar, I added some dried rose flowers here, so that the whipped cream will have a light rose fragrance
-
The whipped cream is as shown in the picture
-
Make a 3cm mark on the cake roll without scratching it. This will make it easier to roll out and the shape will look better
-
Use a spatula to spread the butter evenly
-
Place the stuffed fruits and start rolling
-
Gently press the fruit from the side in front of you, press it into the cream, lift the cake base one-third of the length in front of you, press it with your fingers to make a cake roll, and roll the cake like sushi!
-
After rolling it up, wrap it in oil paper and seal it, put it in the refrigerator to set, and you can cut it and eat it in 15 minutes!
