Homemade chicken feet

Chop the chicken feet and open both sides

Wash with salt and water repeatedly and rinse thoroughly

Boil water in a pot, add chicken feet and blanch for a few minutes, skim off the foam, pour out and rinse with cold water a few more times; add water to the pot again and bring to a boil, add chicken feet and cook for a while until cooked

Take the cooked chicken feet out into a clean container (I like to rinse them again with cold boiled water after taking them out)

Soak the cooked chicken feet in cold boiling water (I added a few ice cubes to speed up the cooling)

Put the soaked chicken feet into the quick-frozen layer of the refrigerator, and wait about an hour and a half or longer (just make sure the chicken feet are slightly hard when you touch them)

Take out the soaked chicken feet, pour out the soaking water, and add fish sauce, white sugar, edible white vinegar, wild sansho pepper, sesame oil, minced garlic, etc. according to your personal taste. Sprinkle some white sesame seeds (you can omit it if you don’t like it) and stir, put it in the refrigerator, take it out from time to time and stir evenly to evenly infuse the flavor.
