Wash the hairtail and marinate it with ginger, green onions, salt and cooking wine for half an hour in advance. Add oil to the pot and fry the hairtail

Fry until golden brown on both sides, add appropriate amount of rice wine, light soy sauce, pepper, green onion and ginger until fragrant, then add appropriate amount of sugar and vinegar

Add all the seasonings and cook for 3 minutes. Add water and cook over high heat until the juice is reduced.
