Roll out the dough into a cylinder, do the same for all three, cover with plastic wrap and let rest for about 15 minutes.

Roll out the dough into a long strip again, roll up the dough, place it with the seam facing down, and put the dough into the mold.

Put it in the oven for the second fermentation, ferment at 38 degrees until it is 80% full.

Place in the preheated oven, heat up and down to 170 degrees, for about 35 minutes. (Please refer to the temperament of your own oven for time and temperature). If the surface is darker, you can cover it with a piece of tin foil.

Immediately after taking it out of the oven, remove it from the mold and let it cool on a rack. After taking it out, it is best to put it on its side for a while to avoid concave waist. Let it cool to hand temperature before bagging it.
