Stir-fried red amaranth

Overview

This is a must-have vegetarian dish for the Dragon Boat Festival. It is relatively old this season, so it can only be stir-fried. When it is tender, just stir-fry it.

  1. Wash the red amaranth and soak it in water.

  2. Add oil to the pot. When the oil is hot, add dried chili peppers and stir-fry over low heat to release the flavor.

  3. Pour in the red amaranth and stir-fry over high heat until the amaranth is cooked and add salt.

  4. Remove from the pan.
