【Suzhou】Bacon Stir-fried Mushrooms
Overview
Because Suzhou doesn’t have much bacon, I’m not particularly good at cooking bacon, so I think bacon should be salty, so I must add some ingredients with umami flavor to enhance its deliciousness. Thus, this bacon stir-fried mushroom dish was born! This dish is very simple to make and does not have too many seasonings. It does not include chili peppers or any heavy ingredients. It is especially suitable for the taste of Suzhou people.

Rinse the bacon, put it into a pot of cold water, bring to a boil, then reduce to low heat and blanch for 5 minutes.

Wash the blanched bacon and cut it into thin slices.

Wash the king oyster mushrooms and cut into thick strips.

Remove the roots of the tea tree mushrooms, wash them and cut them into two sections.

Add a little oil to the wok, heat it up, add shredded ginger and sauté until fragrant.

Add the bacon slices and stir-fry over medium-low heat to release the oil.

You can pour away part of the oil from the stir-fry.

Then pour in appropriate amount of cooking wine and stir-fry evenly.

Put the king oyster mushroom strips and tea tree mushrooms into the pot together and stir-fry evenly.

Then pour in an appropriate amount of light soy sauce to adjust the color. Stir-fry until the king oyster mushrooms and tea tree mushrooms are soft and tender.

Finally, taste it, because bacon itself is salty. If the saltiness is not enough, add a little more salt to taste and serve.

Sprinkle some garlic leaves for added flavor. You don’t have to add it if you don’t have it.
