Slice bacon, wash and cut cowpeas into sections;

Heat oil in a pot, add bacon and stir-fry until translucent and changes color;

Add the minced onion, ginger, and light soy sauce and sauté until fragrant. Add the cowpeas and salt and stir-fry evenly. Add half a bowl of water, bring to a boil over high heat and simmer for 6 minutes, then add the minced garlic;

Remove from pan and plate.
