Remove the scales, internal organs and gills of the small yellow croaker, clean them, add cooking wine and salt and marinate them for ten minutes.

Chop the Pixian bean paste into small pieces and cut the chives into long sections.

Heat the oil in a pan, wash the marinated small yellow croaker in water (use kitchen paper to absorb the water if possible), and fry in the pan.

Flip half way through and cook until browned on both sides.

Add the bean paste and stir-fry for a while, then add half a bowl of water, put the small yellow croaker in and cook.

When the water is almost dry, add the scallions, lift the pot and shake it, it will be cooked in ten seconds.
