Clean and chop the chicken into pieces.

Peel and shell the chestnuts and wash them.

Blanch it in a pot under cold water, remove and wash off any floating foam.

Put the blanched chicken pieces into the pot, add ginger slices, cooking wine, light soy sauce, and water. Bring to a boil over high heat, then turn to medium-low heat and simmer for 20 minutes.

Add chestnuts, season with salt and simmer for 10 minutes.
