-
Freeze the ice water one night in advance
-
Wash the duck feet first and soak them in coarse salt water for more than 2 hours. (This step is really important and cannot be ignored. The duck feet soaked in salt water taste very fragrant and have no duck smell. It is best to use coarse salt. This step also ensures that the duck feet can be crispy.)
-
Add spices and ginger slices to the water and bring to a boil, then add an appropriate amount of cooking wine.
-
After the water boils, put the duck feet in and cook over high heat for 10 to 15 minutes (depending on the size of the duck feet, use a fork in the middle to try more, don't overcook the duck feet and it will become crispy)
-
After cooking, put the duck feet and spices into ice water several times until the water is clear, then drain it. (Remember not to throw away the spices when passing water.
-
Finally, pour the water, add dark soy sauce, light soy sauce, mature vinegar, and salt (appropriate amount), mix well, marinate for 2 hours and then you can eat. It's salty and crispy, and it's perfect for watching TV with a cold drink in the summer.
