Ingredients, wash the spinach, add salt and blanch it in boiling water (adding salt can make the spinach greener).

Remove the blanched spinach, squeeze out the water and chop it finely (I also added carrots for color).

Put the chopped spinach and carrots into a large bowl, beat in 4 eggs, and grind in pepper and salt to remove the fishy smell.

Stir well.

Put a little oil in the pan and add spinach and egg liquid.

Let it turn brown on both sides until it's ripe!
