Wensi Tofu Soup
Overview
Wensi Tofu Soup is a traditional famous dish in the Huaiyang area with a history of 300 years. This dish has extremely strict selection of ingredients, fine knife skills, soft, tender and mellow, and melts in the mouth. Prepare the ingredients: lactone tofu, fresh mushrooms, ham sausage, cucumber, stock

First cut the ham, cucumber, and mushrooms into thin strips and set aside

Take 100 grams of lactone tofu and place it on the chopping board

Dip a knife in some water (to prevent sticking), first slice the tofu, and then cut into thin strips (be gentle with this step, the tofu is very tender)

After cutting, put it into water and split

Then blanch it in boiling water for half a minute, take it out, soak it in clean water and set aside

Pour the stock into the casserole, and then add an appropriate amount of water (it would be better if you use all the stock)

When the fire comes to a boil, add shredded shiitake mushrooms, cover the pot, turn to medium to low heat and simmer for about 10 minutes

Soup is inseparable from thickening. Now let’s prepare water starch. First put 15 grams of corn starch in a bowl, then add 15 grams of water and mix thoroughly

After the mushrooms are fragrant, add shredded ham sausage and tofu, and bring to a boil over high heat

Cook for a while and add cucumber shreds

Add 3 grams of salt and stir evenly with a spoon

Turn to low heat, mix the water starch again and slowly pour it into the soup pot, and stir gently and continuously with a spoon. After thickening, bring to a boil and turn off the heat immediately
