Overview

The biscuits I have made recently are all sweet, and I wanted to change the taste. I saw the recipe of Junzhi's salty crispy strips and tried making them. They were delicious, crispy, milky, fresh, and crispy.

  1. Prepare ingredients and weigh them.

  2. Take a container and pour 115 grams of flour, vegetable oil, maltose (if there is no maltose, you can use white sugar instead), and yeast powder (the yeast powder needs to be dissolved with water).

  3. Knead into a smooth oily dough, place in a warm place, and ferment for about 1 hour, until the volume doubles. Squeeze the air out of the dough with your hands and let it rest for 15 minutes.

  4. Prepare the pastry filling: put 60 grams of cornstarch, salt, and butter in a container and mix.

  5. Knead into puff pastry.

  6. Flatten the relaxed dough with your palms, place the dough on top of the dough, wrap the dough completely with the dough, close the wrapped dough downwards, flatten it with your palms, and roll it into a rectangular shape with a rolling pin.

  7. After rolling it out, fold the two ends of the rectangular dough piece in half along the center line

  8. Fold the dough in half again along the center line, let the folded dough rest for 20 minutes, roll it into a rectangle again, repeat step 7, and fold it in quarters again. After folding it into 40%, roll it out into a rectangle again (a total of 2 40% foldings were performed).

  9. Brush a layer of egg wash on the surface of the rectangular dough sheet.

  10. Make puff pastry: Pour 20 grams of flour and 6 grams of butter into a bowl.

  11. Mix melted butter and plain flour and knead into fine particles with your hands. I also added some white sesame seeds for extra flavor.

  12. Brush the egg wash on the dough and wait for 2 minutes until the surface of the dough becomes sticky, then sprinkle the puff pastry evenly.

  13. Use a knife to cut the dough into strips about 8CM long and 1CM wide.

  14. Pinch up both ends of the small strip, twist it into a spiral shape, and place it on the baking sheet. Let rest for 15 minutes, then bake in a preheated 180 degree oven.

  15. Bake for about 18 minutes, and the crispy strips will come out of the oven.
