Indian Sweet Pancakes

In a bowl, stir together the flour, salt and water until a soft dough forms. Turn the dough out onto a floured board and knead for a while. Then divide the dough into small balls, about the size of golf balls, and cover with a damp cloth or plastic wrap.

Take a small amount of dough and roll it out very thinly with a rolling pin, but don't break it. Sprinkle evenly with powdered sugar, fold into small squares and roll with a rolling pin until very thin.

Place a flat-bottomed frying pan over medium heat, brush with a thin layer of oil, add the rolled-out pancakes, and fry for 30 seconds to 1 minute on each side until golden brown. Eat immediately while hot.

Repeat the above steps until all the dough balls have been rolled and fried.
