Roofah-roasted meatballs
Overview
My family members didn’t like stir-fried loofah, so I tried this method. Unexpectedly, it was very popular, and both adults and children loved it.

Finely chop onions and ginger.

Peel the loofah, cut into hob pieces and soak in light salt water. Add soy sauce, sesame oil and a little water to the meat filling and mix well. Add scallions and ginger, a little salt and bread crumbs and stir well.

Form into small balls and deep-fry until cooked.

Take out the meatballs, leave the oil in the pot and simmer the chopped green onion, add the loofah cubes and a little soy sauce and stir-fry evenly.

Add a bowl of watery meatballs and bring to a boil.

Add salt and a little sugar to taste and add the vermicelli.

The soup is almost ready to serve.
