Cut the brisket against the grain to the size you like

Put the beef brisket into a pot with cold water, pour some cooking wine, add a few slices of ginger, and boil the bleeding water

Cut carrots and potatoes into hob pieces

Slice ginger and garlic, cut dry chili into sections, rinse star anise, cinnamon and dry chili and set aside
