Spicy eggplant buns
Overview
When I was in school, I really liked the buns from the store in front of the school, especially the eggplant buns. Now that I can’t eat them, I have to make them, but I added chili peppers and I like them even more.

Pour an appropriate amount of baking powder and a little sugar into warm water around 35°C, stir evenly, then gradually pour into the flour, knead into a dough and leave it in a warm place.

Steam the whole eggplant for 3-5 minutes, remove from the pot and let cool, peel and cut into small dices, cut into rings, add appropriate amount of chopped green onion, salt, chicken essence, thirteen spices and other condiments, pour oil and stir evenly (the amount of oil depends on your own eating habits), and the bun filling is ready.

Wait for the dough to rise.

Knead the dough into strips and cut into pieces.

Roll out into a medium-thick dough.

Place the wrapped buns in a cage and let them rest for 20 minutes. The noodles will rise better.

After the water boils, add the buns and steam over high heat for 30 minutes (25 minutes is enough for small buns).

After steaming, turn off the heat and take off the lid for 5 minutes.
