We clean the fish roes we bought, soak them in bubbles and squeeze them to prevent them from exploding in the pot. Pour in some cooking wine to remove the fishy smell.

Put the ingredients in a small bowl. Onion, ginger, Sichuan peppercorns, aniseed, bay leaves, and chili peppers. If you don’t like spicy food, leave out the chili peppers and it will taste salty and delicious.

Pour oil into the pot, add the seasonings in a small bowl and sauté until fragrant.

Pour in dark soy sauce.

Pour a bowl of boiling water into the pot, then add the fish roe into the pot.
