Clean the shrimps, remove the heads, cut from the spine, cut the back, and remove the shrimp lines.

Then dice the garlic and pepper and set aside.

Put the oil in the pot at 80-90°C and fry the shrimps until golden brown (the shrimps contain moisture, so be careful when putting them in the pot!).

Remove to plate and set aside.

Add chili garlic to the pot and stir-fry until the flavor is released. Add fried shrimps, salt, chili oil, and oyster sauce.

Continue to stir-fry, add 5ml of water, stir-fry again, add scallions, stir-fry a few times and it is ready to serve.
