Cold Eggplant

  1. My experience is that you should choose thin eggplants. Thick eggplants usually have large seeds inside and are not tasty. Wash and chop the coriander;

  2. Peel the garlic, add some salt and mash it;

  3. After being mashed, the garlic paste will be sticky. It is said that this state is the state where the nutrients in garlic are most easily absorbed;

  4. Steam the eggplant in the steamer for about ten minutes. Use chopsticks to pierce it easily and it is ready; take it out and let it cool for later use;

  5. Cut eggplant into small pieces

  6. Add coriander and minced garlic, add light soy sauce;

  7. Add a little more salt. When I pounded the garlic, I put salt and light soy sauce. This time I just put a little bit of salt, don’t put too much;

  8. Mix evenly and it's ready to eat.
