Curry Pumpkin Rice
Overview
I prefer to be lazy and save trouble. I still have some spareribs in the refrigerator and use curry to make curry sparerib rice. It is served with small pumpkins. People use curry with potatoes, but I use curry with pumpkin. The pumpkin is soft and sweet, but I think it tastes better than potatoes

First put the ribs into a pot of boiling water and blanch the blood

After blanching the ribs, rinse them with hot water and put them into an electric pressure cooker. Add ginger slices and pour an appropriate amount of cooking wine. Heat the water to cover the ribs and press for 20 minutes

Cut pumpkin and onions into chunks

Cut the curry into small pieces

Pour appropriate amount of peanut oil into the wok

Add onions and sauté

Add pumpkin and stir-fry for a while

Pour a large bowl of pork rib soup into a boil and simmer for 10 minutes

When the pumpkin chopsticks are stirred, add the braised pork ribs

Add the curry, turn down the heat and stir until the curry dissolves

Stir the curry well, turn on the heat and simmer for 5 minutes
