I have always liked eating scallion pancakes and often make them at home, but this pancake has a different effect every time I make it. I saw junyao’s post a few days ago that the scallion pancakes are made with bean dregs. I thought it was very good, so I made it once and shared it with everyone

Wrap the bean dregs with gauze and squeeze out the water. Put a small amount of oil in the pot, add the squeezed bean dregs and stir-fry over low heat until dry and soft.

Pour the flour into a basin, pour warm water into the flour (you can also use soy milk, my family uses water after drinking it), stir into large snowflakes and form a dough. Cover with a damp cloth and let rise for 30 minutes.

The onions I bought are white ones (purple ones are good, but I don’t have any on sale here these days, so I can only use white ones, half is enough. I used one too much)

Cut the onion into small pieces and the chives into small pieces. Add oil to the pot, sauté the onion until fragrant, then add the chives, and sauté slowly over low heat.

Then take out all the green onions and add them to the fried bean dregs while the oil is hot. Then add sesame salt and pepper salt and mix well.

Divide the dough into required pieces, roll it out with a rolling pin, make it as thin as possible (I made it into a square shape), pour scallion oil in the middle, and apply the oil on the sides to the middle evenly.

Roll up and cut in the middle, put the cut noodles together,

With the cut side facing up, roll the two pieces of dough together into a round cake

Use a rolling pin to gently roll it out without using too much force

Put it in the electric cake pan and it will be ready in a few minutes

Use chopsticks to tear it open, it’s easy to tear
