Chili-flavored watermelon rind
Overview
This is the third watermelon I have bought since the beginning of summer this year. Because I don’t eat watermelon, I rarely buy it at home. This time, the watermelon my husband bought had a super thick rind. Just because I don’t eat watermelon doesn’t mean I don’t eat watermelon rind, haha. I made this watermelon rind as a side dish to go with porridge for breakfast, it’s super delicious

Prepare watermelon rind.

Remove the red skin from the melon rind, remove the green skin and cut into thin slices.

Cut into thin strips.

Add a little salt and put in a bowl to drain out the water. (About ten minutes)

Rinse the shredded watermelon rind with cold boiled water, drain, and add shredded red pepper.

Add a little peppercorn oil and sesame oil.

Add white vinegar.

Mix well and serve.
