【Henan】Twice-cooked Pork with Dried Plums and Vegetables
Overview
My husband loves to eat twice-cooked pork. According to our Henan cooking method, usually twice-cooked pork is served with fresh peppers and garlic sprouts. Today I modified it slightly and paired it with dried bamboo shoots and prunes. I like these two ingredients. Although I don’t particularly like meat, the prunes and bamboo shoots in it taste better to me than meat. This dish is a combination of northern and southern ingredients

First blanch the pork belly in cold water to remove the foam

Prepare the ingredients for cooking the meat: 2 star anise, 30 peppercorns, 1 piece of cinnamon, 2 dried chili peppers, and a piece of ginger

Add boiling water to the pot, add the fried meat and cooking ingredients together

Cook for about 25 minutes until the meat is cooked, remove and let cool and set aside

Soak the dried bamboo shoots and prunes in advance

Put a little oil in the pot and stir-fry the fragrant bean paste

Add the umeboshi, add soy sauce and stir-fry, add a little broth and cook for 2 minutes to allow the umeboshi to be properly flavored

When the soup is almost dry, slice the cooked pork belly and add

Add a little salt and sugar and stir-fry for 1-2 minutes

Finally add green and red pepper
