Vegetarian stir-fry~~~Chopped pepper and water spinach stems
Overview
When encountering fresh and tender water spinach, the leaves and stems can be cooked separately. Stir-frying the vegetable leaves satisfies my children's bad habit of eating only the leaves. Stir-frying the vegetable stems with garlic and chopped peppers gives a different flavor. It is definitely a vegetarian meal in summer.

Flatten the tender water spinach stems with the side of a knife.

Cut into sections.

Also prepare some onions and garlic.

Put oil in the pot, add garlic and green onions and saute until fragrant.

Add water spinach stalks and stir-fry.

Add a little water to cover the pot and simmer for a while.

When the water is almost dry, use the back of a spatula to squeeze the stems in a circular motion to soften the stems.

Finally add salt, soy sauce and chopped pepper to taste.
