Cut the cucumber in half and scoop out the seeds with a long-handled spoon.

Cut the bell pepper into thin strips, remove the pit from the avocado and cut into thin strips.

Fill the inside of the cucumber with rice, insert strips of bell pepper and avocado, and fill the gaps with rice.

Cut the cucumber rice into 1cm thick slices and serve with the chili sauce.
