Remington cake

Remington cake

Overview

Earl Lamington (Charles Cochrane-Baillie, 2nd Baron Lamington) served as the governor of Queensland, Australia, from 1896 to 1901. Some people say that this cake covered in shredded coconut and chocolate looks like a hat worn by an earl. Some people also say that the Count's cook accidentally dropped the cake into the chocolate, and later covered the cake with shredded coconut, which was very popular among diners. The third theory is that one day during the Earl of Remington's tenure as governor, a large amount of cakes accumulated in the kitchens of Parliament. People divide the cake into small pieces, cover it with chocolate, wrap it in shredded coconut, and distribute it to the parliamentarians. The last theory is that Earl Remington once visited the restaurant Toowoomba's Harlaxton House, and the chef served this cake. The traditional Remington cake is a sponge cake or butter cake cut into pieces, covered with chocolate syrup, and then covered with shredded coconut. Some people also put cream or jam in the cake. New Zealand prefers strawberry-flavored jam, while Australia prefers lemon-flavored jam. To put it simply, Remington cake is sponge cake with chocolate sauce and covered in coconut. Because the cake is tightly wrapped in chocolate, the moisture is not easily lost. The cake is perfectly blended with chocolate and coconut, it's a wonderful feast for the taste.
