Flame Shrimp
Overview
I learned this recipe from the chef, and it was amazing to see the shrimps burning in the pot. The shrimp body is rich in wine and the color of the dish is bright.

After washing the prawns, use scissors to cut off the spines on the whiskers, tails, claws, and heads of the prawns. Make a small cut on the back and pick out the intestines of the prawns.

Ingredients: shrimp, purple onion, red pepper, green pepper.

Catch the shrimps with salt and white wine (10 grams) and marinate them for 10 minutes.

Cut onions into small pieces, and cut red and green peppers into pieces

Heat the pan with cold oil, just a little oil is enough, add onions and stir-fry until fragrant.

Turn on the fire and the temperature of the pot gradually rises. Pour in the pickled shrimp quickly. Under the action of high temperature, the white wine will burn in the pot. Don't be afraid. The alcohol will evaporate and the fire will naturally be extinguished. (I really wanted to take a photo of the burning moment, but I failed. First, the flame burned quickly, and secondly, the flame was light in color)

When the flame goes out, stir-fry the prawns.

Add a little salt and light soy sauce to taste.

For the second time, use a long-handled spoon to scoop out a spoonful of white wine (5 grams) and pour it in. Be quick and don't burn your hands. (The flames burned so quickly that they were extinguished before I could take a photo)

Finally add green and red peppers, stir-fry evenly and turn off the heat.
