Fried Pork Belly with Bitter Bamboo Shoots
Overview
March and April are the season for bitter bamboo shoots. The crispy and tender bamboo shoots can be paired with bacon and pork belly. Adding an appropriate amount of chili, the light bitterness and the crude fiber contained in the bitter bamboo shoots should be the most delicious seasonal meal.

Fresh bamboo shoots.

Cut each stem into two pieces, cut into sections, and boil in water for a few minutes to remove oxalic acid. Then soak it in clean water overnight, changing the water several times in between.

Prepare some chili peppers, onions and garlic.

Slice pork belly.

Heat the pan, add the sliced pork belly, and stir-fry the oil over medium-low heat.

Plate the fried pork belly.

Cut onions into sections and mince peppers and set aside.

Leave some of the lard from the pork belly in the pot, add the garlic and chili, and stir-fry over high heat.

Add the sliced bitter bamboo shoots, continue to stir-fry for a few minutes, then add an appropriate amount of salt, light soy sauce and oyster sauce, season and serve.
