  1. Fresh bamboo shoots.

  2. Cut each stem into two pieces, cut into sections, and boil in water for a few minutes to remove oxalic acid. Then soak it in clean water overnight, changing the water several times in between.

  3. Prepare some chili peppers, onions and garlic.

  4. Slice pork belly.

  5. Heat the pan, add the sliced pork belly, and stir-fry the oil over medium-low heat.

  7. Cut onions into sections and mince peppers and set aside.

  8. Leave some of the lard from the pork belly in the pot, add the garlic and chili, and stir-fry over high heat.

  9. Add the sliced bitter bamboo shoots, continue to stir-fry for a few minutes, then add an appropriate amount of salt, light soy sauce and oyster sauce, season and serve.
