Prepare the raw materials;

Put the ingredients from Zhongzhong, 180 grams of bread flour, 103 grams of water, and 3 grams of yeast into the bread bucket in sequence, and select a dough mixing program to knead the dough;

After the dough is mixed, close the lid of the bread machine and cover it with a wet towel to ferment the dough;

Ferment the medium-sized dough until it quadruples in size;

Add the ingredients in the main dough except butter to the bread barrel, and select a dough mixing program (I forgot to put the bread flour when I took the photo, but added it later);

After the dough mixing process is completed, add softened butter and perform another dough mixing process;

After the dough is mixed, take it out and divide it into 30 small pieces of dough (one small piece of dough is about 15_16 grams);

Take five small pieces of dough and roll them into pieces of the same size (cover the remaining dough with plastic wrap to prevent the surface from drying out);

Stack the five dough pieces in order;

Roll up from the right side and use a scraper to make a mark in the middle;

Cut it in the middle and shape it slightly to form a rosette;

Make all the small dough into rosettes, place them on a golden non-stick baking pan, and put them in the oven for fermentation;

After the roses are fermented, take them out and preheat the oven at 170 degrees for 5 minutes. Place the baking sheet on the penultimate layer and heat it at 170 degrees for 25 minutes. Observe the coloring in the middle and cover it with tin foil in time (I did not cover it with tin foil);
