Shrimp and Cauliflower Puree with White Chocolate Sauce
Overview
The highlight of this dish is the sweet and milky aroma of white chocolate, boiled with onions, red wine vinegar, etc. to make a sweet and sour sauce. But what surprised me was the mashed cauliflower. It actually tasted like mashed potatoes. I was really surprised that cauliflower could be made so delicious, and it was very simple to make! The soft and glutinous milky cauliflower puree, springy and tender shrimps, and crispy phyllo (description at the bottom of the picture) are really unforgettable.

Place the shrimps on top of the cauliflower puree and pour 7 on top. You can divide it into serving plates or put them together on a large plate, depending on your needs.

Add cauliflower and onion cubes, add milk and bring to a boil, then turn to low heat and simmer for 15 minutes

Take out and filter the milk

Put the cauliflower into a blender, add 15 ml of butter, appropriate salt and black pepper, stir into a puree, keep warm and set aside; (if you feel that the puree is too wet, you can put it back in the pot and heat it to remove the moisture)

Heat the pot over medium heat, melt the butter, add the diced onion and stir-fry for 1 minute, add the diced garlic and ginger, stir-fry for 1 minute, pour in the red wine vinegar and bring to a boil;

Add the shrimps, stir-fry, cover the pot, simmer over medium-low heat for 2 minutes until the shrimps are cooked, remove the shrimps, keep warm and set aside;

Put the white chocolate into the pot where the shrimps were cooked (add more butter if necessary)

Slightly remove the dry water and boil it into a sauce
