【Hunan style yellow croaker】
Overview
Last Saturday, the kitchen turned into an explosion laboratory. This was the most charming kitchen record that Hua had ever tried! Reason: fried fish! In fact, I have done fish frying several times, and there are always times when my performance is unstable...like this time! The fish in the pot were just jumping around, but I had no choice but to turn off the fire and close the kitchen door. After waiting in the living room for 30 minutes, I listened to the sound gradually subsided before I dared to go in and see how terrible the scene was! Scrubbing the countertops and walls N+1 times... Never giving up is my personality... I did my homework and tried it again. This time, it finally worked, no pressure!

Ingredients
Steps
-
Put appropriate amounts of washed yellow croaker, onion and ginger into a large bowl
-
Pour in beer, 1 tablespoon of light soy sauce, and 4 tablespoons of cooking wine, cover the fish with plastic wrap and marinate in the refrigerator for 24 hours
-
Use kitchen paper towels to absorb the water from the fish skin and make it slightly sticky with starch (the amount of dry powder is very small if the water is absorbed)
-
Heat a pot over medium heat, rub the ginger all over the bottom of the inner wall, heat 70% of the cold oil
-
Add fish and fry until golden brown on both sides, drain off excess oil and set aside
-
Leave the base oil and sauté ginger, garlic and chopped pepper until fragrant
-
Pour in the fried fish, 2/3 of the way into the water, and simmer over high heat, turning the fish over once during this period
-
Gently shake the pot to collect the juice, add salt and sugar to enhance the freshness, and remove from the pot
