Purple sweet potato blossom steamed buns!
Overview
Before making steamed buns, wash the purple sweet potato, cut it into slices, steam it and press it into puree. Find a colander with a slightly larger hole to press down the purple sweet potato puree and sift it!

First dissolve 2 grams of yeast powder into 100g of warm water (the water temperature is about 35 degrees, you can also reserve 15g of water to prevent the dough from being thin, because each brand of flour has different water absorption, reserve 15g of water and you can add it little by little when kneading the dough) and let it sit for 5 minutes!

Prepare 200g of flour in the bread machine barrel, pour the yeast water and press the dough function button to knead into a smooth dough!

Let’s start preparing the second purple dough! First pour 2g of yeast powder into 45g of warm water and dissolve! (You can also reserve 15g of water and add it when kneading the noodles) Let it sit for 5 minutes!

Mix the purple sweet potato puree and 150g of flour in a bread machine first! Pour in the yeast water and knead together to form a smooth dough!

Two smooth doughs are ready! Cover with plastic wrap and place in a warm place to ferment!

There are many pores in the fermented dough, and it will not shrink when you press it with your hands!

Deflate the two doughs (I used a bread machine) and make sure to knead until no air holes can be seen when the dough is cut!

Roll the two pieces of dough into long strips and cut into small pieces!

Roll the white one into small discs, and roll the purple one into small dough like in the picture!

Wrap the white dough around the purple dough!

Tighten your mouth!

Turn it over and it will look like a white dough!

Use a clean knife to cut a cross in it! Use your hands to roll the dough around and organize it into an oval shape! The steamed buns are round!

Put it into a steamer for secondary fermentation. (Prepare enough water in the steamer to steam the steamed buns. Put the steamed buns into the steamer for fermentation. It will take about 15 to 20 minutes. When they are 1 or 5 times bigger, you can steam them over high heat!) Steam over medium heat for 20 minutes, turn off the heat and simmer for another 5 minutes before opening the lid!
