Wash the cowpeas and set aside.

Chop finely.

Wash the beef, mince it and set aside.

Marinate the minced beef with a little cooking wine, light soy sauce and sweet potato starch for about five minutes.

Wash the green peppers, remove the stems and seeds, dice them and set aside.

Dried noodles, set aside.

Mix the flour and gravy water and set aside.

Heat a pot and add an appropriate amount of oil. Pour in minced beef and chopped green pepper and saute until fragrant. Add cowpeas, salt and a little dark soy sauce to taste. Continue pouring enough water to cover the ingredients into the pot and simmer for about three minutes.

Then add the thickened flour and gravy water, stir over low heat until the sauce becomes thin and dry. When the sauce is just right, add a little chicken essence for seasoning, mix well, and turn off the heat.

Boil water, add noodles, and cook noodles.

Remove and put into a bowl.

Pour juice.

Mix well and serve.
