Choose tofu that is neither too old nor too tender, so it is easy to stir-fry, and the lean meat should be fresh. Wash the tofu, cut it into pieces, put it on a plate, add some salt and marinate it for four minutes (I think everyone knows why you do this, right?), then wash off the salt and drain it, wash the lean meat and chop it into mince (you can also cut it into slices);

Pour cooking oil into the pot and heat it (do not need to heat it too much, as it will hurt if it splashes), add the tofu cubes and fry until golden brown on both sides, remove from the plate and set aside;

Pour the minced meat into the oil for frying tofu and continue using it, breaking up the minced meat as much as possible;

Add tofu, a spoonful of garlic sauce, a spoonful of oil and stir-fry gently to combine and taste;

Add water to cover the tofu, put the lid back on and wait until the juice collects,

When there is still one-third of the thick juice in the pot, add one-third of a spoonful of salt, chicken essence, and half a spoonful of soy sauce, stir gently again, and then take it out of the pot.
