Remove the gills, guts and wash the pomfret, and make a few cuts on the fish.

Place the pomfret on a large plate and place a piece of ginger under each pomfret. Sprinkle chicken essence, cooking wine, olive oil, and shredded ginger on the fish.

Add water to the steamer and bring to a boil, put the plate in, cover and steam for 6 minutes, then turn off the heat and open the cover.

Sprinkle with chopped green onion and pour steamed fish with soy sauce.

Heat the lard in a small frying pan over high heat and pour it over the pomfret.
