Wash and cut the leeks, sprinkle with salt and pickled water, wring them dry with your hands and add to the meat filling.

Add chopped water chestnuts and dried radish, appropriate amount of salt and light soy sauce and mix well.

Heat a small amount of oil in a pan and sauté the mushrooms and dried shrimps until fragrant. Add appropriate amount of light soy sauce and salt and stir well.

Add the fried shiitake mushrooms and shrimp skin to the meat filling and mix to form the filling. Next make the dough.

Mix the corn flour and sweet potato flour, add an appropriate amount of freshly boiled water and make a hot dough.

Add a spoonful of lard and knead thoroughly to form a smooth dough.

Cut the dough into equal portions. (If the dough is dry when filling, you can use your hands to apply some water and knead it before wrapping)
