The three-color taro balls that kill the fresh taro fairy in seconds
Overview
Summer is here, and I always like to eat her taro balls at Fresh Taro Fairy. After watching Rongrong's live broadcast, I immediately started making taro balls, and found that the ones I made were much more delicious than fresh taro balls. They were so chewy, taro, sweet potato, and purple sweet potato, with three colors and three flavors. It couldn't be more perfect.

Steps
-
Peel the taro, purple potato and sweet potato and cut them into pieces, put them into the steaming oven and steam them for 25 minutes. After steaming, mash them with a fork.
-
Let’s make purple sweet potato flavored taro balls first. First pour half of the tapioca flour into a large bowl, add all the boiling water, and stir quickly with chopsticks until it forms a dough.
-
Then add all the remaining ingredients and knead into a ball with your hands.
-
Remember to adjust the moisture content according to the dryness and humidity of your steamed purple sweet potatoes. The kneaded dough is soft, non-sticky and elastic.
-
The taro flavor is made in the same way as the sweet potato flavor. Roll them into a ball, place in a bowl, and cover with plastic wrap to prevent them from drying out.
-
Sprinkle cornstarch on the cutting board, take out a small ball of purple sweet potato dough, roll it into a long strip, and then cut it into small pieces with a knife.
-
After cutting, sprinkle with corn starch, separate the taro balls, and roll them with a layer of flour on the surface.
-
Prepare the other two flavors of taro balls in the same way.
-
Next, cook the taro balls. Boil a pot of hot water, add an appropriate amount of taro balls, cook over medium heat for 3 minutes, wait until the taro balls float on the water, continue to cook for another 2 minutes, and then take them out.
-
After taking them out, soak the taro balls in cold water, which will make them more elastic. Remember to cook the purple sweet potato flavor separately, otherwise the color will be transferred.
-
Pour the prepared taro balls into a bowl. You can add any ingredients you like such as grass jelly, pearls, sago, etc., and then add condensed milk and coconut milk to make the taste even better. Or sweet-scented osmanthus brown sugar water is also good.
