Pumpkin and Shrimp Fried Rice

I bought several Beibei pumpkins online. During this time, all delicacies are inseparable from pumpkins. Today I tried to mix pumpkin cubes with shrimps to make fried rice. Unexpectedly, it tastes very good. Beibei pumpkin is more fragrant and glutinous than ordinary ones, slightly sweet, and the shrimps are crispy. Prepare the ingredients: As shown in the picture, rice is best cooked overnight. Freshly cooked rice can be refrigerated for 15 minutes and the effect will be just as good.

Cut the pumpkin into small cubes and mince some garlic.

Peel and devein the shrimp, cut into cubes, add salt, pepper, rice wine and marinate for a while.

Heat oil in a pan, add diced pumpkin and minced garlic and stir-fry for a while. Add some boiling water and cook over high heat for about 2 minutes. The water will dry out and the diced pumpkin is cooked.
