  6. Beating egg whites is the most critical part. Add a few drops of lemon juice and salt to the egg whites. Add the sugar in three batches. Beat until dry peaks resemble the shape in the picture. Just pick up the egg beater and it will look like an eagle's beak

  7. Add the egg whites (added in three times) into the egg batter and stir up and down (same as for stir-fry) evenly

  8. Stir evenly and pour into the mold, knocking out air bubbles on the table

  9. The upper tube temperature of Vantage oven is 130 degrees and the lower tube temperature is 160 degrees. After preheating for 10 minutes, place the middle layer of the cake and bake it for 40 minutes. Then the upper tube temperature is 150 degrees and the lower tube temperature is 180 degrees for 20 minutes (temperature and time can be determined according to the individual oven)
