Add an appropriate amount of hot oil to the flour, stir to form an oily surface and set aside.

Mix 1 part tofu curd, 1 part chive sauce, 1 part spicy sauce and 2 parts sweet noodle sauce (this sauce is the sauce that needs to be spread on the finished pancakes).

Blanch the flour in hot water first.

Add cold water and knead into a dough, let it sit for 20 minutes.

Take a small piece of dough and roll it into a long strip.

Press into an oval shape with your hands.

Roll out the dough with a rolling pin and spread oil evenly on half of the dough.

Fold the pastry in half downwards.

Roll up the folded dough.

Stand the rolled dough up and press it into a round shape.

Then roll it into a round shape with a rolling pin.

Place the pan into the pan and cook over low heat. When the center becomes swollen, break it up and pour in the egg liquid (the eggs need to be beaten with chopped green onion in advance)

Fry both sides until golden brown and serve.
