【Braised Yellow Croaker】---Jiaodong traditional seafood stew
Overview
The town where I live is surrounded by the sea on three sides. Food was scarce when the elders were suffering from famine, but there were plenty of fish and shrimp in the sea. When I was young, I could remember that when I went to my grandma’s house during the Chinese New Year, there would always be a variety of fried products served on large plates. Basically, they were mainly seafood, including various kinds of fried fish, such as fried croaker, fried boss fish, fried hairtail, smoked mackerel and other fish. Fresh fish cannot be eaten all at once, and cannot be wasted. All kinds of fish can only be fried and preserved. There are two common ways to eat fried fish: steaming and braising. Steaming means directly steaming the fried fish in the pot, and braising is stewing the fried fish with various vegetables. Among them, the one that left the most unforgettable impression on me is braising. Braised fish refers to a cooking method. The method of braised fish is to first stir-fry the seasonings in the pot, then add boiling water, add the fried fish, add salt, light soy sauce, and pepper to taste. Finally, add Chinese cabbage, rapeseed and other vegetables to the pot and stew them together for a while. The aroma will be fragrant when it comes out of the pot. A large pot of stewed vegetables has its own characteristics. The taste of the fish is mixed with the freshness of the fish, and the aroma of the mixed vegetables in the fish meat. In the process of stewing the dishes, they have absorbed the essence of each other and updated their own tastes. It can be said that they complement each other's strengths and complement each other in color and taste. It is really a pleasure to sit in Nuannuan Pitou on such a cold winter day and eat a big cake and a big dish.
