Tomato, Shrimp and Tofu Soup
Overview
The sour tomatoes are paired with tender tofu and shrimps. The sourness of the tomatoes and the tenderness of the tofu are perfectly blended. It tastes great

Two tomatoes, scalded in boiling water with a cross cutter, peeled

Chop the tomatoes into fine dice, as small as you want

Add salt to shrimps, cooking wine, and mix well

Cut the tofu crosswise from the middle and cut it into large pieces along the grain (cut according to your mood)

Light the fire, pour some oil, add tomatoes, stir-fry

Fry it to resemble tomato soup (it is recommended to use ripe tomatoes, which will produce a lot of juice), add some sugar to neutralize the sourness. Then pour in water and bring to a boil over high heat

Boil the tofu, then add some salt to solidify the tofu

Boil again and add shrimps

Use water starch to coat a thin layer of gravy

Squeeze a little lemon juice

Sprinkle in black pepper (you can also leave it out, there is not much difference before and after comparison, I like pepper so I add a little)
