Soak the red adzuki beans in water overnight and press them in a pressure cooker. Use the pot to drain the water and add an appropriate amount of sugar.

Wash the pumpkin and steam it, cool it down to 30 degrees, add baking powder and stir evenly, add flour and stir until it is semi-dry and ferment for half a day. Because I made it in winter, the fermentation is slow, so it takes a long time.

Brush oil all around the empty bowl.

Add the fermented flour into the red bean puree and mix evenly. Then add the chopped red dates. You can also add raisins. I didn’t add them if I didn’t have them at home.

Put it in a steamer to ferment for 20 minutes, then boil the heated water and steam for 20 minutes.
