Fish Head with Chopped Pepper (Copycat Version)
Overview
Last night, my dad sent me two fish heads, and I used one to make fish head and cabbage stew. Mmmmm, it was a success and it was delicious. Another made fish head with chopped pepper. Many years ago I had heard of fish head with chopped peppers, a famous Hunan dish, but I had never tried it. Looking at the plate full of chopped peppers, I was really intimidated. A while ago, I saw some friends from Meitian making chopped peppers, and I was itching to make some too, using peppers that were not very spicy. So I used another fish head to make the fish head with chopped pepper last night, just to test whether the chopped pepper was successful. The reason why it is called a copycat version is because it is said that the authentic chopped pepper fish head does not add steamed fish soy sauce, but I don’t dare to eat spicy food, and the chopped peppers used are not salty enough, so I decided to add some steamed fish soy sauce for seasoning. Just be a copycat. Anyway, this is my first time eating it, so I don’t know what the authentic taste is like, but I think the one I made is quite delicious😜

The 2 processed fish heads sent by my father have been divided into four halves

Sprinkle some salt on the meaty side of the fish head, sprinkle with cooking wine, add shredded ginger and marinate for 20 minutes

Spread a layer of ginger slices and green onion slices on a large round-bottomed plate

Arrange the marinated fish head, meat side down and bone side up

Spread a layer of homemade chopped peppers

Sprinkle some minced ginger

Add enough water to the steamer, bring to a boil over high heat, put the plate containing the fish heads in, steam over high heat for 8-10 minutes, turn off the heat and steam for another two minutes

Take out the steamed fish head

Sprinkle minced garlic and chives

Steamed fish with soy sauce

Pour oil into the pot and heat until the oil emits green smoke

Pour hot oil over it and serve
