Wash the ribs, put them in a pot with cold water, add cooking wine, onion and ginger, and blanch. After the water boils, skim off the floating foam

Fry the sugar color with appropriate amount of oil. Heat the sugar over low heat and stir-fry until the color turns cola color and there are relatively large bubbles

Add the blanched pork ribs, stir-fry the green onions and ginger until evenly browned. Add cooking wine, light soy sauce, appropriate amount of beer, vinegar and sugar and simmer. If you don’t use a pressure cooker, add more beer to cover the ingredients, then turn to medium to low heat and simmer for a long time

Put it into the electric pressure cooker and press the ribs button

Vent the electric pressure cooker and pour the ribs into the wok over high heat to reduce the juice

When the soup is thickened, taste it. If the acidity is not enough, add more vinegar, because vinegar easily evaporates during the stewing process.
